GREEK MEATBALLS
SERVES 10
2 POUNDS LEAN GROUND BEEF
1 CUP BUCKWHEAT, COOKED
1 ONION, MINCED
4 CLOVES OF GARLIC, MINCED
2 TABLESPOONS ITALIAN SEASONING
1 BUNCH FRESH MINT LEAVES, CHOPPED
2 TEASPOONS WHITE VINEGAR
2 EGGS, BEATEN
SALT AND GROUND PEPPER TO TASTE
½ CUP OLIVE OIL
1. Mix beef, buckwheat, onion, garlic, Italian seasoning, mint, vinegar, eggs, salt, and pepper in a bowl. Using your fingers, roll the mixture into meatballs.
2. Heat the oil in a medium pan over medium-high heat. Fry the meatballs in the oil in batches. Use a slotted spoon to move the balls in the oil to brown all sides.
3. Place cooked meatballs on a paper towel to drain.
4. If meatballs remain raw in the center, place on a baking sheet and into a 325°F oven for 15–20 minutes.
